Protein Cinnamon Muffins (No Added Sugar)

There’s something about warm cinnamon muffins that feels like home.

What you’ll need

• 1 cup oat flour
• 1 scoop NUTSÓLA Vanilla Protein Powder
• 1 tsp baking powder
• 1 tsp cinnamon
• 1/4 tsp sea salt
• 2 eggs
• 1/2 cup unsweetened almond milk
• 1/3 cup unsweetened applesauce
• 1 tsp vanilla extract

Optional cinnamon topping
• 1 tsp cinnamon
• 1 tbsp coconut oil, melted

How to make

  1. Preheat oven to 350°F and line a muffin tin.
  2. In a bowl, mix oat flour, protein powder, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, almond milk, applesauce, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Fill muffin liners 3/4 full.
  6. Mix cinnamon and melted coconut oil and lightly brush on top.
  7. Bake for 18–22 minutes until golden and set.

Let cool slightly… and enjoy warm.
