Viral Blueberry Protein Muffins
Ingredients (Makes 12 Muffins)
2 cups oat flour (or whole wheat pastry flour)
1 tablespoon baking powder
½ teaspoon sea salt
1 teaspoon cinnamon (optional)
2 large eggs (room temp)
1 cup unsweetened applesauce (or plain Greek yogurt)
½ cup unsweetened almond milk
1 teaspoon vanilla extract
1 ½ cups fresh or frozen blueberries
Instructions — Step by Step
1️⃣ Preheat & Prep
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease.
2️⃣ Dry Mix
In a large bowl whisk together:
Oat flour
Baking powder
Salt
Cinnamon (if using)
3️⃣ Wet Mix
In a separate bowl mix:
Eggs
Unsweetened applesauce
Almond milk
Vanilla
Whisk until smooth and creamy.
4️⃣ Combine
Pour wet mix into dry ingredients and stir gently until just combined.
Do not overmix — overworking the batter makes muffins dense.
5️⃣ Fold in Blueberries
Gently fold in blueberries, making sure they’re evenly distributed.
6️⃣ Divide & Bake
Spoon batter into muffin cups (about ¾ full).
Bake for 18–22 minutes until a toothpick inserted comes out clean.
7️⃣ Cool, Serve & Store
Let cool at least 10 minutes before enjoying! Keep leftovers in a sealed container for 3–4 days, or freeze up to 2 months.
