Zucchini Banana Oatmeal Bowl (High-Protein & Naturally Sweetened)

Start your morning with this easy, wholesome, and nutrient-packed zucchini banana oatmeal bowl! It’s naturally sweetened, high in protein, and perfect for meal prep or busy mornings. Plus, it’s easy to customize with your favorite toppings.


Ingredients:

    •    1/2 cup rolled oats

    •    1 cup water (or enough to just cover oats)

    •    1/2 zucchini, shredded

    •    1 ripe banana, mashed

    •    1/2 tsp cinnamon

    •    1/2 tsp vanilla extract

    •    1 scoop protein powder of choice (unflavored or vanilla works best)

    •    Optional toppings: fresh berries, nut butter, or a sprinkle of NUTSÓLA peanut butter superfood mix


Instructions:

    1.    In a small pot over medium heat, combine oats and water.

    2.    Once the oats begin to cook, stir in the shredded zucchini and mashed banana.

    3.    Add cinnamon and vanilla. Continue to cook, stirring occasionally, until the oats are thick and creamy.

    4.    Remove from heat and stir in your protein powder.

    5.    Serve in a bowl and top with berries and nut butter or your favorite NUTSÓLA superfood mix flavor for added crunch and nutrition.


Tips:

    •    For overnight oats, simply mix all the ingredients (except protein powder) in a jar and refrigerate overnight. Stir in protein powder in the morning.

    •    Great way to sneak in veggies first thing in the morning!
