Ingredients
1 Bag of Vanilla Almond NUTSÓLA Superfood Mix
2 tbsp Water
2 Cups Chopped Strawberries
1 Can Full Fat Coconut Milk
2 tbsp Arrowroot Starch
1 tsp Vanilla Extract
1 tbsp Coconut Oil
Juice of 1/2 Lemon
Directions
1. Blend 1 bag of Vanilla Almond NUTSÓLA Superfood Mix and 2 tbsp of water in food processor/blender
2. Press mix into muffin tin to form cups
3. Bake at 275°F for 15-18 minutes. Let them cool (tip: chill in freezer for 5 min)
4. While cups bake, heat a sauce pan and add 2 cups chopped strawberries until it reaches a jelly-like consistency. Remove from heat and let cool.
5. Using the same processor/blender (rinse out), mix 1 can chilled full fat coconut milk (just the thick cream part!), 2 tbsp arrowroot starch, 1 tsp vanilla extract, 1 tbsp soft coconut oil, juice of 1/2 lemon
6. Spoon mixture into your cups. Then, top cups off with your strawberry mixture! Store in fridge or freezer. (Thaw if frozen)
